Cocoa Biscotti

Simply Organic Cocoa Brownie Mix 2 eggs
3/4 cup rice flour
Preheat oven to 300 degrees.
Combine Simply Organic Cocoa Brownie Mix, eggs and rice flour in mixing bowl. Mix well. Knead mixture as you would bread; add 1 to 2 tablespoons water, if needed, to bind dough. (Dough shouldn't stick to the working surface or your hands.)
Roll kneaded dough into a log approximately 3" wide and 6" long. Place on lightly greased cookie sheet and bake 30 minutes.
Let cool to touch, and then slice like bread (3/4" thick). Separate slices on cookie sheet, place on side and bake for 10 more minutes per side or until desired texture is reached. (Biscotti are typically very hard cookies.)
Add 1 to 2 teaspoons Simply Organic
peppermint flavor. Sprinkle still-hot biscotti with powdered sugar, or dip cooled biscotti in melted dark or white chocolate, or drizzle melted chocolate over the top.
