Yogurt with Cucumber Salad

This raita is so refreshing, especially on a hot summer day. It's a favorite in our house and will be in yours. Use your own homemade yogurt or any of the popular brands found in the supermarket. Ground cumin is less strongly flavored than the whole toasted seeds.

Ingredients
4 cups (32-ounces) plain yogurt
3/4 cup seeded and grated cucumber
1  medium tomato, seeded and chopped
1/4 cup seeded and minced green chile or bell pepper
1/2 cup minced red onion
1 teaspoon toasted whole or ground cumin seeds
1 1/2 teaspoons salt, or to taste
 cayenne pepper (optional)
1/2 cup sliced cilantro leaves
Directions
In a medium bowl, beat the yogurt, adding a few spoonfuls of milk or water, if desired. Stir in the rest of the ingredients, reserving a tablespoon of cilantro for the garnish.
