Baked Honey-Pistachio Chicken

Pistachios, which are native to Persia, thrive in the Mediterranean as well as in the American Southwest. Try to seek out locally produced honeys whenever you can -- the farmer's market is usually a good place to find them.

Ingredients
 cooking spray
2  eggs
1/2 cup honey
1 cup finely chopped pistachios
1 cup unseasoned bread crumbs
2 teaspoons fresh oregano or 1 teaspoon dried oregano
1/2 teaspoon salt
1 teaspoon freshly ground pepper
6  bone-in chicken breast halves
1/4 stick unsalted butter, melted (4 tablespoons)
Directions
Preheat oven to 375 degrees. Coat a 9x13-inch baking pan with cooking spray.

In one shallow dish, whisk together the eggs and honey. In another shallow dish, mix the pistachios, bread crumbs, oregano, salt and pepper.

Dip each chicken breast first in the egg mixture, then in the nut mixture, making sure to coat them evenly. Arrange the breasts in a single layer in the prepared baking dish and drizzle the melted butter over the top.

Bake the chicken for about 40 minutes, or until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees.
