In Italian, the word "biscotti" is the plural form of "biscotto", referring to any type of biscuit (cookie). It originates from the medieval Latin word biscoctus, meaning "twice-cooked/baked". Originally, the biscuits were baked twice in the oven so they could be stored for long periods of time, which was of particular use during journeys and wars. It is purported that a commander of the Roman Army boasted biscotti would be edible for centuries.

Cocoa Mint Brownies

Ingredients
1 package Simply Organic Cocoa Brownie Mix
2  large eggs
4 tablespoons melted, unsalted butter
2 to 3 teaspoons peppermint flavor
Directions
Preheat oven to 350 degrees.

In a mixing bowl, combine mix, eggs, butter and peppermint flavor. Beat on medium speed for 2 minutes. Spread in 8x8- inch baking pan.

Bake for 20 to 25 minutes.
Chef Suggestions
For "death by chocolate," add 12-ounce package semi-sweet chocolate chips.
For a super sweet treat, frost brownies with white or chocolate frosting, or have fun and swirl the two frostings together.
