Recipe of the Month - Spice and Cream Cakes

Given our Cake Carrot is an award winner; we thought you might like to try this recipe that uses the mix to create delicious mini cakes – perfect for the holidays!

1 package Simply Organic Carrot Cake Mix
2 eggs
1/2 cup light sour cream
1/4 cup water

Preheat oven to 350 degrees. Lightly grease a 12-count muffin pan or use muffin papers. In a medium-sized mixing bowl, add all ingredients and mix well. Pour into muffin pan and bake 25 to 30 minutes or until center tests done with a toothpick or knife. Do not under bake.

Chef Suggestions
Decorate each mini cake as a holiday ornament.

SO1% was pleased to be able to grant funding to the IVRC&D (Iowa Valley Resource, Conservation, & Development) Organic Producer Training program.
