Recipe of the Month - Roasted Peppers
Pick up a peck of peppers at your local farmers market and try our recipe for roasted peppers. Peppers are not only delicious but provide a great source of vitamins A and C.
Ingredients
1/4 cup half and half
1 package Simply Organic Ranch Dip Mix
3 sweet red bell peppers (or others of your choice)
Directions
In a medium mixing bowl, blend half and half with Ranch Dip Mix. Cut peppers in half. Thinly spread mixture on each half of peppers.
Place on broiler pan and broil until peppers are tender and topping turns a light brown color.
Chef Suggests: Serve as a spicy vegetable side, or slice and use as a topping for salad. Instead of cream, substitute olive oil and brush on peppers before broiling. Peppers can also be grilled vs. broiled.
