Curried Tofu Fritters

These curried vegetarian tofu fritters make a delicious snack, appetizer or main dish. Crunchy on the outside, but soft on the inside, these fritters pair well with coconut or peanut sauce for dipping.
1. Place warm water in a large mixing bowl. Add curry powder, crushed red pepper and beaten egg. Mix well. Add soy bits or quinoa and stir until moistened.
2. Heat oil in a skillet over medium heat. Form mixture into 1/2-inch-thick patties, as large in diameter as you want. Dust both sides of patties with flour. Fry patties in skillet for 2 to 3 minutes on each side.
